Easy and delicious turkey meatballs are flavoured with spinach and feta for a great dinner.

Ingredients

  • 1 lb ground turkey
  • 2 cups fresh spinach
  • 4 oz feta cheese crumbled
  • 1 medium egg beaten
  • 1 medium red onion peeled and diced
  • 3 cloves garlic minced
  • 1 tablespoons oregano
  • 1 cup almond flour
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the oven to 200C/400F degrees and line 2 baking sheets with parchment paper.
  • In a large pan or skillet, heat the olive oil and cook the spinach for 2-3 minutes until it has wilted.
  • In a large mixing bowl add the ground turkey, onion, garlic, beaten egg, oregano salt and pepper. Mix well so all the flavours are combined.
  • Spoon in the almond flour and mix in for a firmer consistency.
  • Either using a cookie scooper or your wet hands, form the mixture into balls.
  • Place the meatballs on the baking sheets and bake for 20 minutes until fully cooked through.

Notes

Makes about 24 medium meatballs.
