Cranberries and walnuts make these colourful and tasty low carb stuffing balls made with a low carb bread.

Ingredients

  • 1 cup dried cranberries chopped
  • 8 oz low carb bread store or home made
  • 1 celery stalk finely chopped
  • 1 onion peeled and finely chopped
  • 1 cup walnuts chopped
  • 1 tablespoon sage chopped
  • 1 medium egg beaten
  • 1 tablespoon olive oil

Instructions

  • Preheat the oven to 190C/375F degrees.
  • Make breadcrumbs from the bread rolls by placing them in a food processor and pulsing until bread crumbs form.
  • Heat the olive oil in a frying pan on a medium heat and saute the chopped onion and celery for 3 minutes until soft.
  • In a medium bowl add all the ingredients and mix well.
  • Using damp hands or using a medium cookie scooper make balls from the mixture.
  • Bake for 20 minutes, turning over half way.
