Cranberries and walnuts make these colourful and tasty low carb stuffing balls made with a low carb bread.

- 1 cup dried cranberries chopped
- 8 oz low carb bread store or home made
- 1 celery stalk finely chopped
- 1 onion peeled and finely chopped
- 1 cup walnuts chopped
- 1 tablespoon sage chopped
- 1 medium egg beaten
- 1 tablespoon olive oil
Preheat the oven to 190C/375F degrees.
Make breadcrumbs from the bread rolls by placing them in a food processor and pulsing until bread crumbs form.
Heat the olive oil in a frying pan on a medium heat and saute the chopped onion and celery for 3 minutes until soft.
In a medium bowl add all the ingredients and mix well.
Using damp hands or using a medium cookie scooper make balls from the mixture.
Bake for 20 minutes, turning over half way.
