These cheesy cauliflower balls are made with leftover cauliflower mash and make a delicious side dish or snack.

Ingredients

  • 3 cups cauliflower mash
  • ½ cup Gruyere cheese grated
  • ½ cup mozzarella cheese grated
  • ½ cup Parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup almond flour

Instructions

  • Preheat the oven to 190C/375F degrees. Line a baking tray with parchment paper.
  • In a medium bowl, add the cauliflower mash and mix in the cheeses and spices.
  • Either use a cookie scoop or your hands, form ball shapes from the mixture.
  • Place the almond flour into a shallow bowl or plate.
  • Roll the cauliflower balls into the almond flour for the crispy coating.
  • Place the balls onto the baking tray and bake for 25-30 minutes until golden.

Notes

Quantities will vary depending upon how much cauliflower mash you use.  
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
