Air Fryer Stuffed Peppers
Servings: 3 servings
Bell peppers stuffed with ground turkey and cheese are a quick, delicious and easy recipe for the air fryer.
- 3 bell peppers
- 1 lb ground turkey
- 2 cloves garlic minced
- 1 medium onion peeled and chopped
- 2 tablespoons olive oil
- ½ cup mozzarella cheese grated
- ½ cup tomato sauce
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon monkfruit sweetener or other low carb sweetener
- 1 tablespoon chili powder
- 1 tablespoon cumin powder
- ¼ teaspoon cayenne pepper
- ½ teaspoon oregano
- ½ teaspoon salt
- ½ teaspoon black pepepr
Make the Enchilada Sauce
In a medium saucepan heat the butter.
Add the seasonings and cook for 1 minute.
Stir in the tomato sauce and low carb sweetener.
Simmer for 5-8 minutes. If the sauce is too thick, add water until you reach the consistency you prefer.
Taste and adjust the seasoning to your own preference.
Make the Ground Turkey Filling
In a large saucepan or skillet heat the olive oil on a medium heat.
Add the onion and cook for 2 minutes until soft.
Add the garlic and cook for a further minute.
Add the ground turkey and cook, stirring occasionally until the meat is cooked through.
Stir in the enchilada sauce.
Cook the Peppers
Preheat the air fryer to 400°F for 3-5 minutes.
Cut the tops off the peppers and scoop out any seeds. Set the pepper tops to the side.
Spoon the turkey mixture into the peppers.
Place the filled peppers upright in the air fryer basked and cook for 5 minutes at 200C/400F.
Sprinkle cheese on top and continue cooking the stuffed peppers for 5 more minutes, until the peppers are tender and the cheese is melted.
(Optional) add the pepper tops to the basket when you add the cheese.
Serve with chopped parsley (optional).
