Moist lemon blueberry muffins made with almond flour are a great treat to have with your morning coffee.

Ingredients

  • ½ cup butter softened
  • ½ cup allulose or other low carb sweetener
  • 4 medium eggs
  • 2 cups almond flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 lemon juice & zest
  • 1 cup blueberries fresh
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 180C/350F degrees.
  • Line a muffin tin with 10 muffin liners
  • In a medium bowl whisk the butter until smooth.
  • Add the allulose and continue to whisk.
  • Whisk the eggs in, one at a time.
  • Add the lemon juice and zest, vanilla extract, almond flour, salt and baking powder and whisk until smooth.
  • Gently fold in the blueberries.
  • Spoon the muffin mixture into the cases and bake for 20-25 minutes until golden.

Notes

Makes 10 muffins at 5g net carbs each.
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
