Walnut Goats Cheese Bites
Servings: 4 servings
Crunchy slices of goats cheese covered in walnuts.
- ½ cup walnuts
- 1 tablespoon thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
- 6 oz goats cheese log
Preheat the oven to 200C/400F degrees
Process the walnuts in a food processor until you have small breadcrumbs.
In a small bowl, combine the walnuts, thyme, salt and black pepper.
Cut the goats cheese log into even discs (about 2 cm width).
Roll the goats cheese discs in the chopped walnuts, patting the nuts onto the cheese to cover evenly.
Place the goats cheese discs onto a parchment paper lined baking tray and bake for 8 -10 minutes.
Serve warm or at room temperature with low carb crackers.
