Assemble your dipping station with one shallow dish with the oat fiber, another with the beaten egg and a third with the almond flour mixed with the spices.
Cut the fish into strips. (A bit more evenly and thinner than my chunky ones!)
Dip the fish sticks into the oat fiber, then into the beaten egg. Finally dip into the almond flour mixture. If there is not enough even coverage, go for a double dip and dip back into the egg and almond flour mixture.
Spray the air fryer basked with oil and place the fish sticks into it. Lightly spray them with oil.
Cook at 200C/390F degrees for 10 – 12 minutes. I didn’t flip them as the air fryer cooks evenly but you could flip them halfway through cooking if you want
Serve hot with a side of dips or sauce.
