A savoury tomato jam with chia seeds for a low carb relish.

Ingredients

  • 4 tablespoons chia seeds
  • 5 tomatoes finely chopped
  • 1 small onion finely chopped
  • 1 clove garlic peeled and chopped
  • ¼ cup water
  • ¼ cup apple cider vinegar
  • 1 teaspoon chilli flakes
  • 1 teaspoon erythritol or other low carb sweetener
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Place all the ingredients (apart from the chia seeds) in a saucepan.
  • Bring to the boil, cover and simmer for 20 minutes.
  • Remove from the heat and stir in the chia seeds.
  • Set aside and allow to cool and thicken.
  • Slather over everything!
