Strawberries & Chocolate chips in a low carb muffin

Ingredients

  • 1/4 cup coconut flour
  • 1/4 cup butter, melted
  • 3 eggs
  • 1/4 cup erythritol 52g or sugar substitute
  • 3 tablespoon coconut milk
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon salt
  • 4 strawberries
  • 1/4 cup chocolate chips

Instructions

  • Pre-heat the oven to 200C/400F degrees.
  • Blend the butter, eggs, erythritol, vanilla essence and coconut milk.
  • Add the coconut flour, baking powder and salt. Whisk until the batter is smooth
  • Chop the strawberries and add to the batter, along with the chocolate chips. Fold in gently.
  • Pour the batter into cupcake cups or a greased muffin tin.
  • Bake for 20 minutes until firm.
  • Eat and enjoy!

Makes 6 with 5g net carb each
