Hazelnut & Orange Cookies
Servings: 12 cookies
Low carb cookies baked with hazelnut flour and flavoured with orange.
- 1 ½ cups ground hazelnuts
- ¼ cup butter room temperature
- ¼ cup erythritol or any low carb sweetener
- 1 medium egg
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 Orange, grated rind
Preheat the oven to 180C/350F degrees
Mix all the ingredients in a bowl and blend well into a dough.
Scoop out about a tablespoon of the dough and make a ball from it.
Place on a parchment paper lined baking tray.
Using the back of a spoon, press the dough ball down to make a cookie shape.
Bake for 20 minutes until the cookie bottoms are golden.
Eat and enjoy!
