Vegetable Cauliflower Rice

A savoury cauliflower rice packed with vegetables and colour

  • 1 head cauliflower grated
  • 1 medium onion peeled and chopped
  • 2 cloves garlic peeled and chopped
  • 1 medium red pepper finely chopped
  • 1 cup broccoli florets lightly cooked
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • ½ teaspoon garlic powder
  • 1 tablespoon coconut oil


  • Heat the coconut oil on a low heat in a large frying pan.
  • Add the onion and garlic and cook for 3 minutes until tender.
  • Add the peppers and cook for a further 3 minutes.
  • Add the cauliflower and spices and cook for 5-7 minutes until the cauliflower is tender.
  • Add the broccoli and cook for a further 2 minutes.
  • Eat and enjoy!


Makes 4 servings at 9g net carbs each
