Apple Cinnamon Chia pudding

  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 3 tbslpns 30g chia seeds
  • 2 apples cored, cooked and chopped (about ¾ cup, 80g sliced)
  • 2 teaspoons cinnamon


  • Place the chia seeds in a container and add the vanilla extract and coconut milk.
  • Mix together until the seeds are evenly distributed in the mixture.
  • Add the remaining ingredients, cover the container and place in the fridge overnight.
  • Serve with a topping of cinnamon, eat and enjoy!
