A simple low carb vinaigrette with raspberries livens up any salad.

Ingredients

  • 6 oz raspberries
  • 1/2 cup red wine vinegar
  • 1/4 cup water
  • 1/4 cup light olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Erythritol (powdered)
  • 1/2 teaspoon salt

Instructions

  • Place all the ingredients in a blender or food processor and blend until smooth.
  • Pour into a glass jar or sealed container and keep in the fridge.
  • Shake before use and drizzle over salads.

Notes

The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
