Ingredients

  • 4 large eggs
  • 1 cup coconut milk
  • 1 tablespoon erythritol
  • 2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ cup coconut flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup butter for frying

Instructions

  • Whisk the eggs thoroughly.
  • Add the coconut milk, vanilla and erythritol and whisk.
  • Add the remaining dry ingredients and whisk until smooth.
  • Heat the butter (you could use coconut oil instead) in a frying pan on a medium heat until melted.
  • Ladle a few tablespoons of the pancake mixture into the pan.
  • Cook each side until golden.
  • Eat and enjoy!
