Keto Chicken Meatball Casserole
Servings: 4 servings
An easy keto dinner with chicken meatballs baked in a marinara sauce and cheese.
For the meatballs:
- 1 lb ground chicken
- 1 zucchini grated
- 3 spring onions chopped
- 1 tablespoon thyme
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
For the casserole:
- 2 cups marinara sauce sugar free
- 8 oz Mozzarella cheese grated
- ¼ cup Parmesan cheese grated
Preheat the oven to 200C/400F degrees
Mix the meatball ingredients in a bowl and blend well.
Using clean damp hands form large walnut sized balls with the chicken mixture or use a cookie scoop
Place the balls on a parchment lined baking tray.
Bake for 15-20 minutes until firm and golden
Remove the meatballs from the oven and drain any excess juice.
Place the meatballs in the casserole dish and cover with the low carb marinara sauce
Sprinkle the Parmesan cheese over the marinara sauce
Add the Mozzarella and cover the meatballs
Return to the oven and bake for a further 10 – 15 minutes until the cheese is melted.
Other meat can be used in place of the ground chicken or add some sausage.
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
