An easy vegetarian dish with vegetable slices.

Ingredients

  • 1 zucchini, green
  • 1 zucchini, yellow
  • 3 large tomatoes
  • 1 eggplant
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ¼ cup basil, fresh
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 cup tomato sauce low carb-sugar free

Optional to serve

  • 3 tablespoons pesto
  • ¼ cup Feta cheese crumbled

Instructions

  • Thinly slice the vegetables
  • In a bowl, mix the oil, garlic powder, oregano, salt & black pepper
  • Toss the sliced vegetables in the oil and seasoning.
  • Spread the tomato sauce on the bottom of a pie or casserole dish
  • Arrange the slices on the tomato sauce in a circular pattern upright.
  • Place the fresh basil in between the slices.
  • Cover the dish with foil and bake at 170C/375F degrees for 40 minutes.
  • Remove foil and check that the vegetables are roasted and tender. Bake for a further 20 minutes uncovered.
