A low carb version of the popular holiday egg nog drink

  • 6 egg yolks
  • ½ cup monk fruit low carb sweetener
  • 1 ½ cups Almond Milk
  • 1 ½ cup Heavy cream
  • 1 cup Dark rum
  • 1 tablespoon Vanilla extract
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Nutmeg ground


  • Beat the egg yolks until golden
  • Add the monkfruit sweetener and the vanilla and mix thoroughly.
  • In a saucepan, heat the almond milk and cream and gently bring to the boil. 
  • Slowly add the milk to the egg mixture, whisking as you add.
  • Add the cinnamon.
  • Return the mixture to the saucepan on a medium heat and whisk until the liquid starts to gently thicken.
  • Remove from the heat and stir in the rum.
  • Pour into a jug and sprinkle the nutmeg on top.
  • Serve warm or allow to cool and serve over ice.
