Red bell peppers are stuffed with halloumi cheese and fresh herbs for a tasty low carb side dish or main vegetarian dish.

Ingredients

  • 2 Red bell peppers
  • 2 tablespoons Olive oil
  • 3 Garlic Cloves chopped
  • 250 grams Halloumi Cheese thinly sliced
  • 12 Mint leaves chopped
  • 1 tablespoon Lemon rind/zest
  • 1 tablespoon Thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the oven to 200C/400F degrees.
  • Cut the peppers in half lengthways and remove the core, stalks and seeds.
  • Rub the skins of the peppers with a little of the oil, then arrange them skin side down in a baking dish or on a baking sheet.
  • Scatter half the garlic into the pepper halves, add slices of the cheese, then the mint leaves, lemon rind, garlic, thyme, mint, salt and pepper. Repeat the layers to fill the pepper.
  • Roast for 30 minutes until tender and begin to char around the edges.
  • Eat and enjoy!
