Prawns in a Lemon Marinade with Mint Pesto

- 6 Tiger prawns peeled & deveined
- 1 Lemon juice
- 1 bunch Fresh mint chopped
- 1 garlic clove chopped
Marinade
- 1 garlic clove chopped
- 6 tablespoons Fresh mint chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon creme fraiche / sour cream
- 1 tablespoon Parmesan Cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Place the prawns in a dish and cover with the lemon juice, mint and garlic. Coat well, cover and marinade for 30 minutes.
Put all the ingredients for the pesto in a blender/processor and blitz until smooth. Season with salt and pepper to taste.
Heat up the bbq and cook the prawns on a medium heat for 2-3 minutes on each side until cooked through.
Serve with the mint pesto on the side.
