Broccolil & Red Pepper Salad

  • 1 100g Mixed salad lettuce packet
  • 1 red pepper
  • 1 head broccoli trimmed to florets


  • 3 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 clove garlice peeled and finely chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped


  • Blanch the broccoli in a saucepan of boiling water, then rinse under a cold tap. Dry with a paper towel.
  • Remove the seeds from the pepper and cut into small chunks.
  • Place the lettuce in a salad bowl.
  • Add the broccoli and red pepper.
  • Mix the dressing ingredients together.
  • Pour over broccoli and red pepper, toss gently.
  • Serve immediately


Serves 2 -4  (4 would be a small side salad)
