This low carb blueberry mimosa is a delicious and refreshing drink that you can enjoy without worrying about the carb content.

Ingredients

  • ¼ cup blueberries
  • 1 tablespoon allulose or other low carb sweetener
  • 1 tablespoon lime juice
  • ½ cup prosecco or champagne

Instructions

  • Place the blueberries in a tall glass and muddle them until soft.
  • Add the allulose and lime juice and continue to muddle.
  • Strain the mixture and pour into a glass.
  • Top up with champagne or prosecco slowly. Stir gently to mix.
  • Serve immediately.
