Tender chicken breast is cooked to perfection and then coated in a creamy lemon sauce that is sure to satisfy your taste buds. With only a few simple ingredients, this recipe is easy to make and can be ready in under 30 minutes

Ingredients

The Chicken

  • 2 chicken breasts skinless & boneless
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 tablespoon olive oil

The Sauce

  • 2 tablespoons butter
  • 3 cloves garlic minced
  • ½ cup cream heavy or whipping
  • ½ cup chicken stock
  • 3 tablespoons lemon juice
  • 2 teaspoons lemon zest

Instructions

  • Place the chicken breasts in between two layers of clingfilm and flatten with a rolling pin. Or you could slice the chicken breasts in half.
  • Season the chicken with the salt, pepper and oregano on both sides.
  • Heat the olive oil in a skillet on a medium heat.
  • Sear the chicken breasts for 3 to 4 minutes on each side.
  • Remove the chicken and set aside.
  • Add the butter and garlic to the pan can cook for 1 minute.
  • Add the chicken broth and simmer for 2 minutes for the sauce to thicken.
  • Add the cream, lemon zest and juice and stir through.
  • Return the chicken breasts to the pan, spoon over the sauce and cook for 4 to 7 minutes until the chicken is tender and cooked through.
  • Serve with fresh chopped parsley or basil.

Notes

Makes 2 servings, assuming 1 chicken breast per serving.
