Arugula Goat Cheese Salad Recipe is simple, healthy, and delicious. The flavors of goat cheese, arugula, walnuts and the dressing combine for a perfect salad. You can serve this salad as an appetizer, a main course, or as a side dish.

Ingredients

  • 2 cups arugula
  • ½ cup baby spinach
  • ¼ medium red onion finely sliced
  • 10 oz goats cheese crumbled or sliced
  • 6 oz cherry tomatoes halved
  • ¼ cup walnuts toasted

Dressing

  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic minced
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon salt

Instructions

  • Mix the salad dressing ingredients in a small bowl and whisk until combined.
  • Wash and dry the arugula and baby spinach, and place it in a large bowl or plate.
  • Add the chopped red onion over the salad leaves.
  • Scatter the chopped tomatoes and walnuts over the salad.
  • Add the goats cheese and drizzle the salad dressing over the salad.
  • Serve immediately.
