This easy salad is a great way to use rotisserie chicken or leftover cooked chicken. Cranberries and walnuts make a perfect combination in any chicken salad. Not only are they delicious, they’re also healthy.

Ingredients

Dressing

  • ½ cup homemade mayonnaise
  • ¼ cup Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon dill, chopped
  • 1 tablespoon parsley, chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Chop the cooked chicken.
  • In a large bowl mix the dressing ingredients together until smooth.
  • Add the chopped chicken, walnuts and dried cranberries.
  • Serve, or store covered in the refrigerator for up to 3 days before serving.
