A rich and creamy broccoli and Stilton soup is pure low carb comfort food on a cold day.

Ingredients

  • 1.32 lb broccoli chopped into florets
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 10.58 oz Stilton cheese
  • 2 cups vegetable stock or chicken stock
  • ½ cup cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Heat the oil in a medium pan on a medium heat and saute the onion for 5 minutes
  • Add the broccoli florets and cook for a further 5 minutes
  • Pour in the stock and simmer for 15 minutes
  • Crumble in the Stilton cheese and cook for further 5 minutes
  • Use a hand blender to blend the soup until smooth.
  • Return the soup to the saucepan and stir in the cream. Season with salt and pepper.

Makes 6 servings
