An easy recipe to make with left over turkey and cranberry sauce. Low carb flatbreads are used to make a tasty turkey quesadilla.

For each quesadilla spread half the cranberry sauce on a low carb tortilla.
Place half of the chopped turkey on top of the sauce and then cover with slices of brie.
Place the tortilla in a large non stick pan and cover with another low carb tortilla.
Cook over medium heat, carefully turning once, until lightly browned on both sides and cheese begins to melt.
Remove from the pan and cut into 4 wedges. Serve warm.
This recipes assumes you already have made (or purchased) low carb tortillas.
