Roasted green beans with garlic and 3 types of cheese makes an easy and tasty low carb side dish.

Ingredients

  • 8 oz green beans
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup Parmesan grated
  • ½ cup Cheddar cheese grated
  • ½ cup Mozzarella cheese grated

Instructions

  • Preheat the oven to 200C/400F degrees.
  • Trim the beans.
  • In a medium bowl add the garlic, olive oil, salt and pepper.
  • Add the green beans to the bowl and toss to cover all the beans in oil.
  • Place the beans on a roasting tray (we line ours with parchment paper).
  • Scatter the garlic from the bowl over the beans.
  • Roast for 20 minutes.
  • Remove from the oven, turn the beans over and cover with the 3 cheeses. Return to the oven and bake for a further 5 minutes until the cheese is melted.
  • Serve with chopped chives or parsley (optional)

Makes 4 servings
