Roasting cauliflower florets is an easy and delicious low carb side dish.

Ingredients

  • 1 medium cauliflower cut into florets
  • 1 clove garlic minced
  • 1 lemon zest & juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Heat the oven to 200C/400F degrees.
  • Put the cauliflower in a medium bowl and add the remaining ingredients. Mix well.
  • Place the cauliflower in a roasting tin/on a baking tray.
  • Bake for about 25-30 minutes until golden brown.  You should turn the florets half way through cooking too.

Makes 4 servings.
