Simple and packed with flavour, this tomato burrata salad is great for summer and a must for tomato season!

Ingredients

  • 2 large Heirloom tomatoes sliced
  • ½ cup cherry tomatoes halved
  • ½ cup olives pitted, green, black or mixed
  • ¼ cup basil leaves
  • 1 ball Burrata cheese
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar sugar free if possible
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Place the tomatoes on an medium plate.
  • Scatter the olives over the tomatoes.
  • Tear the Burrata into pieces and scatter over the tomatoes.
  • Drizzle the olive oil and balsamic vinegar over the salad.
  • Sprinkle with basil leaves and season with salt and pepper.
  • Serve immediately.
