A easy grilled zucchini salad that can be made on the BBQ, griddle pan or the grill

Ingredients

  • 4 zucchini large
  • 4 oz Feta cheese
  • 1 bunch Fresh mint
  • 1 tablespoon lemon juice
  • 1 clove garlic crushed
  • 7 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Preheat the grill (or bbq/ griddle pan)
  • Slice the zucchini diagonally into thick slices, toss them in 3 tablespoons of the olive oil and season. Cook for 2-3 minutes on each side until charred and tender. Leave to cool.
  • Mix the tablespoons of olive oil, lemon juice and garlic clove well in a separate bowl. Season to taste
  • Place the zucchini, feta and mint in a large serving bowl, add the dressing and toss well.
  • Serve immediately
