Baked Parmesan Zucchini Fries

Ingredients

  • 2 zucchinis
  • 1 egg
  • 75 g dried Parmesan cheese

Instructions

  • Preheat the oven to 180C/350F degrees.
  • Line a baking tray with parchment paper.
  • Cut the zucchini top and bottom off.
  • Cut into long strips. I cut mine into half, then quartered, then cut in half again.
  • Beat the egg in a bowl.
  • Place the Parmesan cheese on a plate and spread evenly.
  • Dip a zucchini stick into the beaten egg.
  • Then dip the zucchini into the Parmesan so it is covered.
  • Double dip if necessary.
  • Place the zucchini sticks on the parchment paper.
  • Bake for 15 minutes, then turn over and bake for a further 10 minutes.
  • Eat and enjoy!

Makes 12-16 Sticks
