Roasted Cauliflower Couscous

- ½ head cauliflower
- 14 oz artichokes jar or tinned
- 1 clove garlic peeled and finely chopped
- 15 black olives
- 1 Lemon rind & juice
- ¼ cup fresh parsley finely chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
Pre-heat the oven to 200C/400F degrees,
Cut the cauliflower into florets and place in a food processor.
Blitz until the cauliflower resembles breadcrumbs.
Place on a baking tray and drizzle with the olive oil.
Bake for 12 minutes, stirring through half way.
In a bowl, add the garlic, olives, parsley, artichokes, lemon juice and rind.
Add the cauliflower to the bowl and stir through.
Season to taste.
Eat and enjoy!
