Chayote is used to make a low carb apple crumble for a grain free dessert.

Ingredients

  • 3 Chayote
  • ½ cup low carb sweetener brown if possible
  • 1 tablespoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves, ground

Crumble Topping

  • ½ cup butter, unsalted cute into cubes
  • 1 cup almond flour
  • ¼ cup low carb sweetener I used erythritol
  • 2 teaspoons cinnamon

Instructions

  • Preheat the oven to 180C/350F degrees
  • Peel the chayote and cut into quarters. Remove the cores.
  • Cut into thin slices, about 5 mm thick.
  • Place the slices into a bowl and add the spices and low carb sweetener.
  • Toss until all pieces are covered.
  • Place the chayote slices into a baking dish
  • In a bowl, place the crumble ingredients and gently blend using your fingers into a crumble texture.
  • Spoon the crumble on top of the chayote in the baking dish.
  • Bake for 45-50 minutes until the top is golden and the chayote are soft.

Notes
