Low carb cinnamon slices that taste as good as they smell. A moist cake to enjoy with your morning coffee.

Ingredients

  • ½ cup coconut flour
  • ½ cup butter, unsalted melted
  • 5 eggs medium
  • ½ cup erythritol or other low carb sweetener
  • ½ teaspoon baking powder
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt

Cinnamon Swirl

  • 2 tablespoons cinnamon
  • 2 tablespoons erythritol
  • 2 tablespoons butter, unsalted melted
  • 3 ounces cream cheese softened
  • 2 tablespoons water optional, depending upon batter texture

Instructions

  • Pre-heat the oven to 200C/400F degrees.
  • Blend the butter, eggs, erythritol and vanilla essence.
  • Add the coconut flour, baking powder and salt. Whisk until the batter is smooth
  • Mix the tablespoons of erythritol and butter with the cream cheese. Blend together until smooth (I used a fork, then moved to a spoon).
  • Grease a square baking tin and line it with parchment paper.
  • Spoon the cake mixture into the tin.
  • Add the cinnamon mixture on top of the cake mixture and using a spoon, swirl the mixture into the cake mixture. Make your own patterns!
  • Bake for 30 minutes until firm.
  • Cut into 8 slices.
  • Eat and enjoy!
