Low carb cinnamon slices that taste as good as they smell. A moist cake to enjoy with your morning coffee.

- ½ cup coconut flour
- ½ cup butter, unsalted melted
- 5 eggs medium
- ½ cup erythritol or other low carb sweetener
- ½ teaspoon baking powder
- 2 teaspoons vanilla extract
- ½ teaspoon salt
Cinnamon Swirl
- 2 tablespoons cinnamon
- 2 tablespoons erythritol
- 2 tablespoons butter, unsalted melted
- 3 ounces cream cheese softened
- 2 tablespoons water optional, depending upon batter texture
Pre-heat the oven to 200C/400F degrees.
Blend the butter, eggs, erythritol and vanilla essence.
Add the coconut flour, baking powder and salt. Whisk until the batter is smooth
Mix the tablespoons of erythritol and butter with the cream cheese. Blend together until smooth (I used a fork, then moved to a spoon).
Grease a square baking tin and line it with parchment paper.
Spoon the cake mixture into the tin.
Add the cinnamon mixture on top of the cake mixture and using a spoon, swirl the mixture into the cake mixture. Make your own patterns!
Bake for 30 minutes until firm.
Cut into 8 slices.
Eat and enjoy!
