This strawberry halloumi salad is a delightful combination of strawberries and avocado with grilled halloumi slices, drizzled in a light dressing.

Ingredients

  • 1 Avocado
  • 7 oz Halloumi cheese
  • 6 large Strawberries
  • 1 tablespoon olive oil

Dressing

  • 1 tablespoon Balsamic vinegar
  • 2 tablespoons Olive oil
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 tablespoon Fresh mint chopped

Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • Cut the halloumi lengthways and brush the halloumi slices lightly with olive oil on both sides.
  • Grill the halloumi slices for 2-3 minutes on each side, or until grill marks appear and the cheese is softened. Remove from heat and set aside.
  • Peel the avocado and remove the stone. Slice avocado and strawberries.
  • Whisk the dressing ingredients in a medium bowl.
  • Place the strawberries, avocado and grilled halloumi on a plate.
  • Pour the dressing over the salad and serve.
