This strawberry halloumi salad is a delightful combination of strawberries and avocado with grilled halloumi slices, drizzled in a light dressing.

- 1 Avocado
- 7 oz Halloumi cheese
- 6 large Strawberries
- 1 tablespoon olive oil
Dressing
- 1 tablespoon Balsamic vinegar
- 2 tablespoons Olive oil
- ½ teaspoon Salt
- ½ teaspoon Black pepper
- 1 tablespoon Fresh mint chopped
Preheat a grill or grill pan over medium-high heat.
Cut the halloumi lengthways and brush the halloumi slices lightly with olive oil on both sides.
Grill the halloumi slices for 2-3 minutes on each side, or until grill marks appear and the cheese is softened. Remove from heat and set aside.
Peel the avocado and remove the stone. Slice avocado and strawberries.
Whisk the dressing ingredients in a medium bowl.
Place the strawberries, avocado and grilled halloumi on a plate.
Pour the dressing over the salad and serve.
