A low carb pancake recipe make with peanut powder. Add chocolate chips for a chocolate peanut pancake.

Ingredients

  • 6 tablespoons Peanut flour
  • 2 medium Eggs
  • 1 teaspoon baking powder
  • 2 tablespoons coconut milk or almond milk
  • 2 tablespoons allulose or other low carb sweetener
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 tablespoons coconut oil for cooking

Instructions

  • In a bowl place the peanut flour, baking powder and salt together and mix.
  • Add the eggs, coconut milk, vanilla extract and allulose and mix well until a thick batter is produced.
  • Heat the coconut oil in a frying pan on a medium heat.
  • Gently spoon about ¼ cup of pancake mixture into the frying pan and cook until bubbles have appeared and the mixture seems firm (about 2-3 minutes).
  • Flip over and cook the other side for 2-3 minutes.
  • Or cook the pancakes in a mini Dash pancake maker.
  • Eat and enjoy!

Notes

Makes 6 small pancakes
