Ingredients

  • 2 cups Ground turkey
  • 1 head Broccoli
  • 1 Onion chopped
  • 2 cloves Garlic chopped
  • ½ cup Parmesan cheese grated
  • 1 tablespoon Onion powder
  • 1 tablespoon Garlic powder
  • 1 tablespoon Oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  • Preheat the oven to 180C/350F degrees
  • In a bowl mix the ground turkey with the chopped onion and garlic. Add the garlic powder, oregano, salt and black pepper. Mix thoroughly.
  • Place the broccoli in a food processor and blitz until it looks like green breadcrumbs.
  • Heat the olive oil in a frying pan on a medium heat and add the broccoli. Cook gently for 5-7 minutes, stirring until cooked.
  • Remove from the heat and add the Parmesan cheese. Stir until combined.
  • Line out a piece of silver foil for at least 12 inches in length. I place the silver foil in my roulade tray for ease of making this.
  • With a spoon, spread out the turkey mixture over the silver foil and press down until even.
  • Spread the broccoli mixture over the turkey evenly.
  • Using the silver foil at the smallest end, gently roll the turkey mixture into a roulade.
  • Tighten the ends of the silver foil as you would a Christmas cracker, and ensure that the silver foil is sealed.
  • Place on a baking tray and bake for 50 minutes.
  • Remove from the heat and let sit for at least 10 minutes. Remove the silver foil, slice and serve.
