Preheat the oven to 180C/350F degrees
In a bowl mix the ground turkey with the chopped onion and garlic. Add the garlic powder, oregano, salt and black pepper. Mix thoroughly.
Place the broccoli in a food processor and blitz until it looks like green breadcrumbs.
Heat the olive oil in a frying pan on a medium heat and add the broccoli. Cook gently for 5-7 minutes, stirring until cooked.
Remove from the heat and add the Parmesan cheese. Stir until combined.
Line out a piece of silver foil for at least 12 inches in length. I place the silver foil in my roulade tray for ease of making this.
With a spoon, spread out the turkey mixture over the silver foil and press down until even.
Spread the broccoli mixture over the turkey evenly.
Using the silver foil at the smallest end, gently roll the turkey mixture into a roulade.
Tighten the ends of the silver foil as you would a Christmas cracker, and ensure that the silver foil is sealed.
Place on a baking tray and bake for 50 minutes.
Remove from the heat and let sit for at least 10 minutes. Remove the silver foil, slice and serve.
