A turkey broccoli roulade made from ground turkey and filled with broccoli and Parmesan cheese makes a hearty dinner recipe.
It was only a matter of time before I made a meat roulade for the Chief Taster. This turkey broccoli roulade makes a great main dish and can be sliced for a packed lunch or picnic. Even better, is that because it is made from ground turkey it is a cheap option for dinner. My favourite kind of meal.
I had come across a large portion of ground turkey in our warehouse store and at the price they were selling it would have been rude not to purchase it. I thought that if the Chief Taster didn’t like it, it would make a tasty treat for the dogs as they get raw food as a treat. As well as coconut flour and pumpkin doggie cookies which I ought to share the recipes, but that’s another day and my dog’s delicious secret.
Turkey Broccoli Roulade
Making burgers or turkey balls was an easy option to make out of the ground turkey, but I wanted a bit more of a challenge. As I am still in roulade fever, my thoughts went to rolling up the meat. Initially I had toyed with the idea of using spinach but it can be a bit wet for a filling. So up stepped bold broccoli! With some Parmesan for additional flavour I was onto a winner.
The rolling of this turkey roulade was no more difficult than a sponge roulade. I was a bit nervous that it would collapse during the construction as I was not using any binding ingredients. In meat loaf, breadcrumbs and egg are used to bind the meat together. I was just going to use the meat as the ground turkey was firm and pliable. There’s nothing better than a cooking gamble. For some it’s the roulette table, for me it’s the kitchen! As well as a questionable bottle of cheap wine on a Friday night before payday.
I pressed the turkey down onto a sheet of silver foil, then covered it with the mixture of broccoli rice and Parmesan cheese. Rolled it up tightly, baked it and a happy husband was made! He was hesitant at first when I told him what I was making. Once it was on his plate and devoured, I barely saw the rest of it. Apparently is it just as delicious cold and is easily warmed up too.
Low Carb Main Dish
If you are looking for a cheap meat main dish, then roll up some ground turkey, add a filling and you have a tasty main dish. Sliced the green filling brightens up the dull brown colour of the turkey. Serve with some tasty vegetables, perhaps a salad and you have a happy household!

Turkey Broccoli Roulade
- 2 cups Ground turkey
- 1 head Broccoli
- 1 Onion chopped
- 2 cloves Garlic chopped
- 1/2 cup Parmesan cheese grated
- 1 tablespoon Onion powder
- 1 tablespoon Garlic powder
- 1 tablespoon Oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Preheat the oven to 180C/350F degrees
- In a bowl mix the ground turkey with the chopped onion and garlic. Add the garlic powder, oregano, salt and black pepper. Mix thoroughly.
- Place the broccoli in a food processor and blitz until it looks like green breadcrumbs.
- Heat the olive oil in a frying pan on a medium heat and add the broccoli. Cook gently for 5-7 minutes, stirring until cooked.
- Remove from the heat and add the Parmesan cheese. Stir until combined.
- Line out a piece of silver foil for at least 12 inches in length. I place the silver foil in my roulade tray for ease of making this.
- With a spoon, spread out the turkey mixture over the silver foil and press down until even.
- Spread the broccoli mixture over the turkey evenly.
- Using the silver foil at the smallest end, gently roll the turkey mixture into a roulade.
- Tighten the ends of the silver foil as you would a Christmas cracker, and ensure that the silver foil is sealed.
- Place on a baking tray and bake for 50 minutes.
- Remove from the heat and let sit for at least 10 minutes. Remove the silver foil, slice and serve.
