3 eggs

1/4 cup erythritol (or other sugar substitute)

2 tpsns vanilla

1 1/4 cups mascarpone cheese

1 batch coconut flour pancakes  (see under breakfast recipes)

1 1/2 cups brewed strong coffee

1 tblspn cocoa powder


  1. Cut the coconut flour pancakes into strips.   Dip and soak in the coffee.
  2. Put the strips on a bottom of a 8 x 8 dish.   Layer the mascarpone mixture, then repeat with another layer of pancake strips and  mascarpone.  Sprinkle the cocoa powder on the top.Put in the fridge for an hour.
  3. Eat and enjoy!

    HI Angela,
    I made my tiramisu with the swiss roll recipe and add some Grand marnier in the coffee and beat the egg white stiff to the mixture. Delicious!
