This version of Pad Thai salad is a colour and tasty salad recipe. The coriander makes this very refreshing on the palate.
This is a delightfully fresh salad that is simple but very tasty. The coriander and lime dressing is just delicious. It has gone straight into my top 5 salads as it tastes so fresh and is so simple to make. If you don't like coriander you may want to use something else...but I don't think it will have the same "zing". The bowl I made did not last long and I think this may be a weekly dish for a while!
1 zucchini (courgettes)
2 cups bean sprouts
3/4 cup nuts finely chopped (mix of almonds, cashews or peanuts, unsalted)
1 yellow pepper, deseeded and sliced into strips
4 spring onions, finely sliced
1/2 cup fresh coriander, finely chopped
Juice from one lime
1 tblspn olive oil
1/4 tspn salt
- Use a vegetable peeler to slice the zucchini/courgettes into thin strips.
- Mix all the ingredients and ensure that they are thoroughly coated.
- Eat and enjoy!
