Lemon and Blueberry Chia Pudding

This lemon and blueberry chia pudding makes a great breakfast and start to the day.

Although this pudding was not as thick as the others I have made this week, I still loved the slightly wet texture with the zest of the lemon against the plump sweetness of the blueberries.   Very uplifting and a lovely start to the day. If you wanted it thicker, add another tablespoon of Chia seeds.  

The best thing about Chia puddings is that you throw the ingredients in a jar, shake them to mix, leave in the fridge overnight and voila! An easy breakfast.

INGREDIENTS

2 tblspn chia seeds

1 cups almond milk

1/4 cup blueberries

Juice of 1 lemon

Large dash of Stevia

METHOD

  • Place all ingredients into a jar with a lid (or any Tupperware with a lid).
  • Shake well until mixed.
  • Place in the fridge and leave overnight.
  • Eat and enjoy!

Serves one

    I think there's a misprint on the carb count on this recipe. Should it be 28g Carbs (not 284), 16g Net Carbs?
    Making this soon - it sounds good.
