Halloumi Wrapped in Red Pepper, with Lemon and Chilli

This is a dish that is delicious cooked on the bbq but you could cook it on a griddle pan or in an oven for those of you not blessed with vast months of bbq weather.  To be totally honest, the pictures are not the best representation of the dish, but the taste more than makes up for this.  I will have to redo this one and take better pictures *feigns sigh of protest*.  These are simply little parcels of pepper and cheese yumminess with a nice kick of chilli!


4 red peppers, deseeded and cut into quarters

200g halloumi cheese

1 red chilli , finely chopped

1 tspn oregano

4 olives cut into slices (black or green)

Juice and zest of one lemon


  • Grill the pieces of red pepper, skin side up until they lightly chargrill.
  • Put a slice of halloumi in the centre of each strip and sprinkle over some lemon zest and juice.
  • Sprinkle the chilli, oregano and sliced olives over the halloumi, then roll the red pepper around the cheese.
  • Cook on a hot bbq and cook for 5 minutes on each side until the cheese is softening.
  • Serve, eat and enjoy!
