Cilantro Lime Cauliflower Rice

Cilantro Lime cauliflower rice is an easy cauliflower rice recipe packed full of flavour. It only takes 20 minutes to cook and is a great low carb and grain free substitute for rice.

I like to roast my cauliflower rice as it gives it a great colour and texture.  There is no squeezing out of excess water too.  It’s a much easier way to cook cauliflower rice for a rice substitute recipe too. You could use frozen cauliflower rice for this recipe too.  Just cook the rice according to the packet instructions and add the flavourings.

Cilantro or Coriander?

Where in the world you live determines what you call the herb "Coriandrum sativum".  In North America, the name cilantro is used for the leaves and the stalks of the plant.   The seeds are referred to as coriander.   Most other countries call the leaves and stalks coriander, and the dried seeds coriander seeds.

The seeds and the fresh leaves had different smells.  The leaves have a taste and smell that you either love or loathe.  Some say it tastes like soap.  The ground seeds have a warming spicy taste and is often paired with cumin.

We were having a “curry night” and I served this cilantro lime cauliflower rice with a mushroom curry and butter chicken.  I did not expect the Chief Taster to enjoy this cauliflower rice recipe as he is not a big fan of cilantro.  I spooned a small quantity on his plate without telling him what herb was in there.  He devoured the lot and helped himself to more which was a good compliment.  He had the leftovers for lunch the next day.  I’m not sure at what I am shocked at most.  That he liked the cilantro lime cauliflower rice or that there were leftovers…

What to Serve with Cilantro Lime Cauliflower Rice?

Although enjoyable on it's own, this cauliflower rice can be served with many dishes. Enjoy it with a chicken fajita salad or a delicious bowl of keto shrimp scampi. My tequila chicken is also a good choice as a main dish with this cilantro lime cauliflower rice.

Ingredients
 
 

  • 3 cups cauliflower rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 2 Limes, juice
  • 1/4 cup cilantro, fresh
  • 2 jalapeno peppers chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat the oven to 200C/400F
  • Place the cauliflower rice on parchment paper lined baking tray
  • Drizzle with the oil
  • Bake for 20 mins, stirring halfway through cooking.
  • Remove from the oven and place in a bowl.
  • Add other ingredients and stir well.
  • Serve and enjoy!
