Moist and healthy chicken meatballs made with zucchini and flavoured with herbs make a great dinner or low carb snack.  They are keto, grain free, paleo and Whole 30.

These chicken meatballs are easy to make and you can add your own herbs and spices to them.  The zucchini helps bind the mixture without the need for an egg or flour.  It also keeps the meatballs moist as well as another way of sneaking vegetables into your food.

Can’t Find Ground Chicken?

If you can’t find ground or minced chicken, then pop a couple of boneless chicken breasts into the food processor and blitz until the meat is ground.

Serve by themselves with a creamy or marinara dip for a hearty appetiser.  For a main dish you could serve them on a bed of thinly chopped cooked cabbage in place of noodles.   Another suggestion is to slather the cooked chicken zucchini meatballs in a marinara sauce, cover with cheese and bake.

  • 1 lb chicken, ground
  • 1 medium zucchini grated
  • 3 spring onions chopped
  • 1 tablespoon thyme chopped or dried
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper


  • Preheat the oven to 200C/400F degrees
  • Mix all of the ingredients in a bowl and blend well.
  • Using clean damp hands form large walnut sized balls with the chicken mixture.
  • Place the balls on a parchment lined baking tray.
  • Bake for 25-30 minutes until firm and golden.
  • Eat and enjoy!

    Hi, hiw do you make the cabbage with cream cheese & parmesan?

      Jane – I just shred white cabbage, boil it until tender, then add cream cheese, grated cheddar cheese and season to taste.
