When in doubt what to do with vegetables, roast them and add cheese is always a good choice! This dish makes a great holiday side dish or something for the weekend roast. Only under 4g net carbs a serving too!
An easy keto side dish
This keto green bean recipe is as tasty as it is easy. It's a great dish to make when you have a lot going on in the kitchen as it takes minutes to prepare. You can then work on another dish whilst this one roasts in the oven.
Instead of a green bean casserole, try this cheesy green bean dish. One bite and you will be glad that you do. The side dishes can be the star of the show at times!
Are green beans keto?
Green beans are an excellent vegetable for a low carb diet as they only have under 4g net carbs per 100g serving. Enjoyable raw, steamed or roasted they are a great nutritional choice. A great source of minerals and vitamins, they are high in Vitamin C and A.
What type of green beans to use for this recipe?
There are more than one type of green bean. We used French green beans but string beans or even chopped long beans could be used. Did you know that green beans are also known as string beans and snap beans?
Fresh green beans are best. We would not recommend using canned beans and frozen green beans has my eyebrow raised whether it would work or not. If you have successfully roasted frozen green beans, this recipe should not be a problem.
How to make cheesy keto green beans
The biggest task for this vegetable recipe is chopping the green beans. We line them up in bunches on a chopping table and trim the tops and bottoms with a large sharp knife. If you work in batches is does not take long.
Tossed in garlic and oil, then roasted. The beans are covered with a mixture of 3 cheeses at the last 5 minutes of roasting.
For the cheeses we used, Parmesan, Mozzarella and Cheddar cheese. When using Cheddar cheese make sure it's a decent cheese and not a block of yellow rubber. I have to hunt high and low for a decent Cheddar here. Some of the brands sold I would not even use as a door stop!
What goes with roasted green beans?
Once you taste this cheesy green bean dish you may be tempted to settle down with a plate of just this alone. However, it makes a great side dish to any beef, chicken or pork dish.
How to store and reheat this recipe
If there are leftovers, I'd be shocked but it can happen. Store any leftovers in a sealed container and keep in the fridge. I think this dish is best fresh so I would recommend that leftovers are not kept for more than a day.
To reheat the cheesy green beans, pop them in the oven for 5 minutes, or give them a zap in the microwave.

Cheesy Keto Green Beans
- 8 oz green beans
- 2 tablespoons olive oil
- 4 cloves garlic
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup Parmesan grated
- ½ cup Cheddar cheese grated
- ½ cup Mozzarella cheese grated
- Preheat the oven to 200C/400F degrees.
- Trim the beans.
- In a medium bowl add the garlic, olive oil, salt and pepper.
- Add the green beans to the bowl and toss to cover all the beans in oil.
- Place the beans on a roasting tray (we line ours with parchment paper).
- Scatter the garlic from the bowl over the beans.
- Roast for 20 minutes.
- Remove from the oven, turn the beans over and cover with the 3 cheeses. Return to the oven and bake for a further 5 minutes until the cheese is melted.
- Serve with chopped chives or parsley (optional)
