These cheesy cauliflower balls are a great way to turn leftover cauliflower mash into a tasty side dish, appetizer or even a snack for the children.
We took our leftover cauliflower mash and added a mixture of 3 cheeses, formed them into balls, using almond flour for a crispy coating. Baked until golden these were a great low carb side dish for dinner.
Leftover cauliflower mash
I usually freeze any leftover cauliflower mash but thought I would make another dish out of them. I was thinking of the holidays when a huge roast dinner has been enjoyed and I wanted something other than reheated leftovers for the next day.
As my cauliflower croquettes are a family favourite and I have many recipes in ball shapes on the website, cauliflower balls seemed like a great idea! There's something fun about rolling food into shapes.
How to make cauliflower balls
This is a simple recipe and can be made ahead, ready to bake when needed.
We took our left over cauliflower mash and added cheese and flavourings. For the cheese we used a mixture of Gruyere, Mozzarella and Parmesan.
For a crispy coating we rolled the balls in almond flour but you could use dried parmesan or ground pork rinds too.
Can you freeze these?
Freezing these mashed cauliflower balls is easy and they will keep for up to 3 months in the freezer. You could freeze them before or after cooking the balls too. Either form the balls with the leftover cauliflower mash and freeze or after baking allow them to cool, then freeze.
To freeze them, place them in a ziplock bag or an airtight container. Defrost them in the fridge then reheat in the oven for 10-15 minutes until warm.
Can these be air fried?
For a crispier cauliflower cheese ball, you can air fry them. Use the same temperature as the recipe card but reduce the time to 8-10 minutes, checking on them half way through to ensure that they are golden.
Try other cheeses for different flavours to the cauliflower balls. Goats cheese or feta would be a great taste.
If you don't have left over cauliflower mash, this recipe can be adapted using cauliflower rice. Cook the cauliflower rice and add to the cheese and almond flour.
Add a few tablespoons of leftover turkey gravy to the mash for an extra flavour.
Add chopped chives, spring onion or fresh herbs for another great taste option.

- Preheat the oven to 190C/375F degrees. Line a baking tray with parchment paper.
- In a medium bowl, add the cauliflower mash and mix in the cheeses and spices.
- Either use a cookie scoop or your hands, form ball shapes from the mixture.
- Place the almond flour into a shallow bowl or plate.
- Roll the cauliflower balls into the almond flour for the crispy coating.
- Place the balls onto the baking tray and bake for 25-30 minutes until golden.
