Broad Beans in Tomato Sauce

I am an avid lover of Lebanese food and this is one of many dishes I had in Beirut.  Lebanon is an amazing country and I urge everyone to visit..it has a beautiful coastline, ancient ruins to visit,  an amazing history, great skiing during winter in the mountains, warm, welcoming people and the freshest, tasty food!   And no-one parties like the Lebanese!   This is also a great use of broad beans which I also adore.  To me they are the bean of summer and take me back to my childhood, popping beans with my grandmother.  Broad beans are also know as Fava beans.    A simple dish which can be eaten warm or cold.   Nice with a glass of Chianti…ha ha (Silence of the Lambs subtle reference…*groans and apologises*..)

Broad beans are a good source of protein, Vitamins A and C, fibre and folate.  Tasty and good for you as many veggies are!

INGREDIENTS

500g broad beans

1 40 g can of tomatoes

1 tblspn tomato paste

4 cloves garlic

2-3 tblspns olive oil

salt and pepper to taste

METHOD

  • Heat the oil in a large saucepan and saute the garlic until it is lightly golden.
  • Add the beans and cook for 1 minute.
  • Add the tomato paste, stirring to coat the beans.
  • Add the can of tomatoes, season and simmer for 10 minutes.
  • Eat and enjoy!
  • Serves 2 large portions.
