Blackened Salmon Fillets

The Chief Taster has been on a few business trips and seems to have this every time so thought I would try it.  I finally have got the blend of spices right (according to him) and am now wondering on what vegetable I could try this on so I can taste it myself (as I am a vegetarian).  I tried eggplant but that was not a success.  The search is on.  Or perhaps I could use this spice mix in a soup….now that’s a thought.  I did try the seasoning in a vegetable stir fry and loved it.  This is very easy to make and takes about 15 minutes to prepare and cook.

Fish Baked in a Walnut Crust

The Chief taster tells me that the walnut crust kept the fish moist and loved the flavour as it took him back to the Middle East with the nutty and herb taste.   This is a great way to “jazz up” a piece of white fish and easy to make.   Ground some nuts, throw in some herbs, dip the fish in egg, roll in the nuts, bake and voila!  Simple! Coconut Fried Fish with Spicy Sauce

This was so well recieved by my tasters, that I made extra.  I shall be putting this on the list of regular dishes too, as it was fairly easy to make and a nice twist on “fish and chips” (I served this with a side of baked sweet potato fries).   The sauce is lovely and can be made to have on the side with other dishes, not just this fried fish.   The coconut coating is a nice change from the traditional heavy batter and helped use up my large stock of coconut too! Red Thai Salmon Curry

The strong taste of Salmon goes very well with the red Thai curry flavours.   This dish will tantalize your taste buds with the succulent salmon.   I made my own red curry paste but you could cheat and use a paste from a jar for a quicker dish.   You could also make a large batch of red curry paste and keep it in the fridge too though!  This is a quick, easy and delicious dish to make ! Prawns in a Spicy Coconut Sauce

This is a spicy coconut sauce that is similiar to a thai curry.  The sauce could be used for a chicken dish too, or perhaps a steaming bowl of veggies!  Easy to make too, just blitz in a processor and voila!  And full of coconut…yummy!   I used a packet of fresh peeled prawns for speed.  Back in Dubai it would have been a few of their large prawns the size of your fist from the supermarket!
