Fish in Egg and Lemon Sauce

You can use most white fish for this dish, either fillets or fish steaks too. I used Tilapia in this dish.  I am also wondering about trying a vegetarian version and perhaps just cook this with some vegetables only.   Steaming fish  on top of the onions and then using the cooking liquid to make a sauce is a good way to retain water-soluble vitamins.  You could use other vegetables in place of the onions.  Perhaps zucchini or carrots? The sauce is a classic Greek egg and lemon sauce called avgolemono.

Excuse the photos…photographing this dish did not come out very well!  Will have to retry this one for better photos!

Blackened Salmon Fillets

The Chief Taster has been on a few business trips and seems to have this every time so thought I would try it.  I finally have got the blend of spices right (according to him) and am now wondering on what vegetable I could try this on so I can taste it myself (as I am a vegetarian).  I tried eggplant but that was not a success.  The search is on.  Or perhaps I could use this spice mix in a soup….now that’s a thought.  I did try the seasoning in a vegetable stir fry and loved it.  This is very easy to make and takes about 15 minutes to prepare and cook.

Fish Baked in a Walnut Crust

The Chief taster tells me that the walnut crust kept the fish moist and loved the flavour as it took him back to the Middle East with the nutty and herb taste.   This is a great way to “jazz up” a piece of white fish and easy to make.   Ground some nuts, throw in some herbs, dip the fish in egg, roll in the nuts, bake and voila!  Simple! Coconut Fried Fish with Spicy Sauce

Coconut covered fish

This was so well recieved by my tasters, that I made extra.  I shall be putting this on the list of regular dishes too, as it was fairly easy to make and a nice twist on “fish and chips” (I served this with a side of baked sweet potato fries).   The sauce is lovely and can be made to have on the side with other dishes, not just this fried fish.   The coconut coating is a nice change from the traditional heavy batter and helped use up my large stock of coconut too! Red Thai Salmon Curry

The strong taste of Salmon goes very well with the red Thai curry flavours.   This dish will tantalize your taste buds with the succulent salmon.   I made my own red curry paste but you could cheat and use a paste from a jar for a quicker dish.   You could also make a large batch of red curry paste and keep it in the fridge too though!  This is a quick, easy and delicious dish to make !
