Chicken, Lemon and Tarragon Burgers

Every now and again the Chief Taster gets a treat and I will cook him meat.  This week’s treat was a chicken burger.  It was very easy to make and he enjoyed the flavours.  He declared them moist and tasty.  I used chicken breasts but you could use chicken mince instead.   It is as easy as throwing everything into a blender, press a button, them make some burger shapes.  Cook and voila! A happy husband!   I’ve tested this with both dried and fresh tarragon and the Chief Taster gave the thumbs up to both.   A bit of the lemon juice is added to the pan after cooking the burgers.  If you want to grill or bbq your burgers, just sprinkle on the lemon juice directly.

I found this recipe on Epicurious and was intrigued by the unusual flavour combinations, but from my time in the Middle East, could see how this would work as these flavours are used in this region.  I changed the amount of oil and used a different chicken cut to the original recipe as the Chief Taster is a fussy man.   I grilled the chicken but this would be great on the bbq too.   This is also very easy to do and would make a great quick supper dish when you really can’t be bothered to cook but want something tasty.

Beetroot, Halloumi and Green Bean Salad

The sweetness of the beetroot goes very well with the salty taste of the Halloumi.   This salad is best eaten as soon as it is ready too, otherwise the cheese will harden..it’s a lot nicer still warm and soft.    If you are having a bbq, you could cook the Halloumi and beetroot over the coals/gas.  Otherwise, this is just as nice under a regular grill. The colours are a great combination too…food should be pretty enough to eat!  Yummy, tell me more Diva…

Halloumi Wrapped in Red Pepper, with Lemon and Chilli

This is a dish that is delicious cooked on the bbq but you could cook it on a griddle pan or in an oven for those of you not blessed with vast months of bbq weather.  To be totally honest, the pictures are not the best representation of the dish, but the taste more than makes up for this.  I will have to redo this one and take better pictures *feigns sigh of protest*.  These are simply little parcels of pepper and cheese yumminess with a nice kick of chilli! Aubergine (Eggplant), Tomato and Parsley Salad

I have been reaching for my simple salad recipes.  This salad is enhanced by the mint and yoghurt dressing which lifts the flavours and goes well with the aubergine (eggplant).  I used a griddle frying pan to cook the aubergine (eggplant) but this would be delicious cooked on the BBQ too!  Failing that, just grill/broil it! Tequila and Chilli Chicken

The weather is cooler for us now in the Middle East and the BBQ has been cleaned and ready for business! I adore this time of the year…we now have a few months of lovely weather and BBQ’s ahead of us! Woo hoo!  Initially I cooked this with chopped chillis, but think it would be better if they were blended as a paste so have changed the recipe to reflect this.  And hey, it includes Tequila!  If you don’t partake in alcohol, leave this out.  You could use a dash of orange juice to replace it.   This is a moist and zesty chicken dish which the husband scoffed happily.  It is now on the repeat list of dishes.   This list is growing and he has never looked happier..ha ha!  Yummy, tell me more Diva..

Cauliflower, my new favourite vegetable as a low carber and the wonders that you can perform with it.  Not the boiled to sogginess you got as a child (well, in my house…both my grandparents were ghastly cooks and I still feel cheated about that…none of that picture post card yummy granny made cakes for us…the horror stories I could tell…and probably will…).  Tell me more Diva…
