Cream Cheese Mousse with Berries

Cream Cheese Mousse

The Chief Taster ate this dish with a loud, “mmmm” and cleaned the glass dish it was served in with a loud clatter of his spoon.  It’s an easy dessert to make and I was just using up some cream cheese I had in the fridge.  This would make a great last minute dessert when you have hungry eyes staring at you with a sweet tooth!  You will need a blender of sorts for this though.  I used a hand blender.

You could play around with the flavours too, as I think that just using the juice and rind of a couple of lemons would be a delightful lemon dessert.  Almost cheesecake in taste too!

Cream Cheese Mousse

INGREDIENTS

1 cup heavy cream

1 cup cream cheese

1 cup berries (I used mixed frozen berries)

3 tbspn erthyritol (or sugar substitute)

Juice of 1/2 lemon

Cream Cheese Mousse

METHOD

  • Add the cream cheese to a bowl/blender and blend well until smooth.
  • Add the berries, erthyritol and lemon juice and continue to blend until smooth.
  • In a separate bowl, whisk the heavy cream until thick.
  • Add the cream to the cream cheese mixture and fold until blended.
  • Place in serving dishes.
  • Eat and enjoy!

Serves 2-4 (depending upon the size of your serving dishes!)

    What a great last minute dessert. I’ve always got berries in the freezer and cream cheese in the fridge. Perfect.
